You will need...

  • 500g beef rump steak

  • 60g bean thread noodles

  • 1 Lebanese cucumber (130g)m halved lengthways, seeded, sliced thinly

  • 100g cherry tomatoes, quartered

  • 1 small red capsicum (150g), sliced thinly

  • 3 green onions, sliced thinly

  • 1/3 cup firmly packed fresh coriander leaves

  • 1/3 cup firmly packed fresh mint leaves

  • Thai Dressing

  • 1/4 cup (60ml) lemon juice

  • 1 tablespoon fish sauce

  • 1 tablespoon brown sugar

  • 1 tablespoon peanut oil

How to make Thai Beef Salad for kids:

  1. Cook Beef in heated oiled larg pan until browned on both sides and cooked as desired. Cover; stand 10 minutes then slice beef thinly.

  2. Meanwhile, place noodles in large heatproof bowl, cover with boiling water, stand until just tender; drain. Using kitchen scissors, cut noodles into random lenths.

  3. Make Thai dressing

  4. Return noodles to same cleaned bowl with remaining ingredients and dressing; toss gently to combine.

Thai Dressing: Place ingredients in screw-top jar; shake well.
Serves 4: Per serving 8.2g fat; 1130kj (270cal)
